Chef Dayashankar Sharma

With over 28 years of culinary experience, Chef Dayashankar Sharma has become synonymous with producing quality food that pairs tradition with contemporary ideas and techniques. He has worked with a number of prestigious brands and has helped to establish several high-profile outlets.

 

Having held the position of Head Chef for the critically acclaimed Imli, Mayfair Pinnacle and Zaika, Chef Dayashankar Sharma has had a varied career, having also led teams of 12-14 chefs at his most recent position as Indian Food Consultant for a collection of major airline catering companies.

 

He was also responsible for a host of events and state banquets for foreign Presidents, Dignitaries and Luminaries in his time at the Taj Hotel.

 

Having partnered with Rajesh Suri to launch The Grand Trunk Road restaurant, he continues to explore the heady and rich flavours of India through a well devised menu comprising of high quality ingredients and his trademark culinary skills.

A Grand Trunk Road

Celebrated chef Dayashankar Sharma boasts almost 30 years of culinary experience and has become synonymous with producing quality food which pairs tradition with contemporary ideas and techniques. He has worked with a number of prestigious brands and has helped to establish several high-profile outlets.

This includes having held the position of Head Chef for the critically acclaimed Imli, Mayfair Pinnacle and Zaika, as well as leading teams of chefs as Indian Food Consultant for a collection of major airline catering companies. He was also responsible for a host of events and state banquets for foreign Presidents, Dignitaries and Luminaries in his time at the Taj Hotel.

In 2016 he partnered with Rajesh Suri, a restaurateur who has become instrumental in the rise of Michelin-starred Indian food establishments and a regular on MasterChef, to launch The Grand Trunk Road restaurant.

Based in East London’s vibrant South Woodford, the Grand Trunk Road restaurant takes inspiration from its namesake Grand Trunk Road. Built for traders in the 16th century, the Grand Trunk Road is Asia’s longest road, running through several regions and connecting Bangladesh to Afghanistan. The road acted as a major trade route and is still functional today. It has welcomed many travellers, as they sought to trade ingredients, spices and recipes, giving it its lively, diverse and colourful reputation.

The Grand Trunk Road restaurant offers a huge selection of dishes inspired by the sights, sounds, smells and flavours of this famous route, as well as the vibrant atmosphere and community spirit that would have been felt by all who travelled it.

Chef Sharma has quickly established a high profile and celebrated reputation for the eatery, securing accolades for his culinary skills and exceptional menus.

Having won awards such as London’s Best Curry, London’s Best Indian Restaurant and also inclusion in the Michelin guide, Chef Sharma could be forgiven for resting on his laurels. However, Chef Sharma makes regular journeys to the Grand Trunk Road route. Here he spends time travelling the route, seeking inspiration and sampling the  flavours of four nations and several regions to bring to diners a selection of dishes that capture the spirit of the trade route, which has a reputation for being lively, full of character and a feast for the senses.

Chef Sharma also consults with a number of international, high profile chefs on his menus, asking them to sample and feedback on the dishes, which he in turn does for them. The result, are dishes which pay homage to the sights, sounds and smells of the Grand Trunk Road route, modernised and reimagined for diners at the Grand Trunk Road restaurant.
